This summer has definitely been the summer of weddings – and especially August with a wedding/wedding event every single weekend. Two of my good friends, Lauren and Jerrod, got married this weekend at our family acreage. It was definitely a special wedding! For Lauren’s bridal shower, I was assigned to cupcake duty and chose to make Lauren’s favourite flavour: Vanilla Confetti Cupcakes. These little babies are cute to the sight and delightful to the taste with bold, rich vanilla flavours, so let’s get to the recipe!…
Roasted Corn Guacamole
After working way too many hours this week, I’m finally getting some well deserved R & R this long weekend, at my girlfriends family’s gorgeous cabin in Columbia Lake, BC. Being so busy at work, I’ve been neglecting my blogging duties, and relaxing at a cabin goes hand in hand with having plenty to eat and drink, which just so happens to go hand in hand with a little blogging!
After a friendly neighbour brought over some delicious Taber corn (adding to the already abundant supply on hand), a corn related recipe was definitely in order! Having seen several variations of corn salsa online and in magazines, I decided it was time to whip up my own!

JC100 Review (Julia Child 100th Year Celebration)
As part of wrapping up the last 15 weeks of JC100, Carlene and I wanted to take the opportunity to give our thoughts on the whole experience, what we learned and how it all tasted!

Boeuf Bourguignon | JC100 – Week 15
It’s the moment we’ve all been waiting for… the fifteenth and FINAL week of the JC100! FIFTEEN WHOLE WEEKS, that’s three and a half months…105 DAYS…nearly a third of a year! And of course, the final dish is one of Julia’s flagship recipes – Boeuf Bourguignon. This couldn’t have worked out better, as my mother made beef stew on Sunday, and had purchased about 5 pounds of stewing beef. Suspecting that this recipe was coming, I made sure she set aside 3 pounds in case my premonitions came true!
As a stew described by Julia Child as “one of the most delicious beef dishes concocted by man”, I was definitely looking forward to the end result of this rather laborious recipe. Though I can’t say whether this was man-kinds most delicious beef dish, as I am no connoisseur of beef stews, it definitely did not disappoint! The stew was rich, hearty and had an array of wonderful flavours!
Buckle up, this is a long one!

Thick & Chewy Chocolate Chip Cookies
The elusive chocolate chip cookie…. something everyone seems to be searching for but can’t quite find. Well ladies & gentlemen, this might be one of the closest solutions I’ve found so far. I think the chewiness of this cookie is what does it for me, so let’s get to this recipe so you can give it a try for yourself.

Cookin’ Greens BBQ Pizza
We were recently contacted by Cookin’ Greens to create a unique and tasty using some of their fresh frozen vegetable mixes. Bob & I decided that creating a veggie packed BBQ pizza would be the best option! Now here is something cool about Cookin’ Greens which I really appreciate: all their frozen veggies (chopped kale, chopped spinach, chopped rapini, Designer Mix and the Athlete’s Mix) are frozen within six hours after being freshly farm picked, then are double washed, double blanched, chopped and flash frozen to seal in the maximum amount of nutrition and flavour. Because of Cookin’ Greens intense process, you can find these frozen veggies in the organic isle. But I’m hungry, so let’s get to the recipe!…
Scallops Gratinee (with Wine, Garlic, and Herbs) | JC100 – Week 14
I must admit, I was expecting this weeks recipe to be the popular boeuf bourguignon, but maybe that will be next week for the big finale! Of course, receiving a recipe with scallops was no disappointment as I LOVE seafood and scallops are no exception! As usual the recipe did not disappoint, making for a rich and delicious appetizer that left me craving more (as good appetizer’s should!).

Walleye Rice Cakes | Leftover Makeover
One of my “fridge struggles” is finding something to do with leftover food, especially with the common left over items like rice and pasta. The other night I had two items on hand: left over wild ancient grain rice and fresh walleye from a fishing trip with my dad. So off to the kitchen I went and concocted this recipe. It was also a crowd pleaser even to the most difficult to impress (aka. our dad who calls everything we make “hippy food”, loved these cakes).

Cheese Souffle | JC100 – Week 13
It has finally arrived…the infamous Souffle!
I knew at some point during JC100 this recipe was going to show up in our inbox, and though slightly terrified, I was very excited to try my hand at it! Now I’ve gotta have a little sympathy for the poor old souffle, it’s gotten a pretty bad rep as being a difficult dish to make, but it really is quite simple and I can happily say mine turned out wonderfully! (Admittedly, I have never had a souffle, but after researching a little I think the flavours and textures were spot on!)

Corn Roasted Walleye
If anyone knows our family, they know we are big into fishing – specifically walleye. Our dad, the leader of the Deutscher pack, was a member of Team Canada for walleye fishing (yes, there is a team Canada…), Board for the Fishing for Tomorrow Foundation and the Saskatchewan Walleye Trail‘s Vice President, it’s safe to say we know how to fish. Anyways, my dad and I went fishing one day and caught some decent sized walleye. I decided it was time to break away from the routine of the normal breaded and fried walleye and found this fabulous recipe and it was a new family hit!…
